We make our HOT honey seasonally, utilizing both light or dark honey (whichever we have a surplus of at the time). We grow our own variety of hot peppers (various chilis, habaneros, ghost, etc.) that are then dehydrated, crushed and infused into our honey. We attempt to please most “hot and spicy enthusiasts” by finding that perfect balance between hot and sweet, but peppers have a mind of their own and will vary in heat depending on the season. Therefore, the heat index of our hot honey may vary from one batch to the next depending on the peppers of the season.
